Tant Sannie's Hazelnut Praline Milkshake

This recipe is taking delicious to a dizzying new level. And while the days are still short and the nights long and cold, let's revel in the comfort of indulgent winter cocktails a little while longer. This grown-up milkshake features a heavenly hazelnut praline paste which you can whip up at home with very little time and effort. Used a lot in traditional French pastries, praline paste is basically toasted caramelized nuts that have been ground very finely. Combine it with a scoop of good vanilla bean ice cream, some milk and that all important x-factor ingredient, Tant Sannie se Melktert liqueur, and you have an unforgettable mu00e9lange of flavours. Ingredients

  • 400 g hazelnuts
  • 250 g caster sugar
  • 70ml water
  • u00bd vanilla beanu00a0 u00a0 u00a0
  • 1 scoop vanilla ice creamu00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0u00a0
  • 200 ml milku00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0 u00a0
  • 50 ml Tant Sannie se Melktert liqueur

METHOD

Roast the nuts in the oven at 170u1d52C for about 15 minutes. In a saucepan, combine the sugar, water and vanilla bean and bring to boil. Carefully stir in the nuts. The sugar will crystallize which is normal. Keep stirring until the sugar turns into caramel. Discard the vanilla bean and pour the caramel onto a baking sheet. Let it cool down. Once the caramel is hard and cool, break it into small pieces and mix it using a food processor. It will turn into a powder first and then into a soft paste. Transfer it into an air-tight container, you can keep it in your pantry for about a month. To make the milkshake, blend ice cream, milk and Tant Sannie se Melktert liqueur using a stick blender. Pour the milkshake mixture and praline paste into a tall milkshake glass alternately, so you have a couple of layers of each. Serve immediately.
