Tant' Sannie Stout Cake

Let us take you to chocolate cake heaven this month with this decadent Tant Sannie & Stout Cake. There are probably thousands of chocolate cake recipes out there and everyone has their preferred one, but the addition of dark stout beer in this recipe makes the cake deliciously moist and rich without being too sweet, and combined with the sweet, fragrant Tant Sannie se Melktert liqueur cream cheese icing, the perfect balance is created.


Ingredients for the stout cake:​

  • 1 cup (250 ml) butter
  • 1 cup stout beer
  • 3/4 cup cocoa powder
  • 2 cups cake flour
  • 2 cups sugar
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup sour cream

Ingredients for the Tant Sannie Cream cheese icing

  • 1 X 250 g tub cream cheese at room temperature
  • 1 cup icing sugar
  • 50ml Tant Sannie se Melktert liqueur


Method for the stout cake:

Melt the butter in a sauce pan, remove from heat and let cool a bit. Mix in the stout and cocoa powder. Mix the flour, sugar, baking soda and salt in a large bowl. Mix the eggs and sour cream in another large bowl. Mix the stout mixture into the egg mixture. Mix the dry ingredients into the wet. Pour the batter into one or two greased and baking-paper lined circular cake pan(s). Bake in a preheated 180ᵒC oven until a toothpick pushed into the middle comes out clean. If you bake it in a single pan then it should take about 40-50 minutes. If you bake it in two cake pans then it should take about 20-30 minutes. While you wait for the cake to cool, prepare the icing.

Method for the cream cheese icing:

Cream the cream cheese with an electric mixer. Slowly mix in the icing sugar and then the Tant Sannie se Melktert liqueur. Once completely cooled, decorate the cake with the icing.
